Egg Baker
2 eggs
Sour Cream
Salsa, tomatoes also may be used
Bacon, broken into small pieces
Sharp cheddar cheese
Mushrooms, optional
Salt and pepper, to taste
Fresh chives, chopped
Recipe Directions
Preheat oven to 350 degrees. Lightly butter ramekin. Place 2 eggs in bottom and pierce yoke with a fork. Add salsa around eggs, about 6 dabs evenly spaced about the ramekin. Add chives and mushrooms, if used. Add salt and pepper to taste and heap on large amounts of cheddar cheese.
Bake for about 24 minutes and remove from oven. Place large dollop of sour cream in center of egg baker. Garnish with additional chives and bacon and serve.
