Super Loaded Granola
4 cups old-fashioned oats
1 cup desiccated coconut flakes (available in natural foods stores)
1 cup walnut pieces
2 teaspoons cinnamon
1/2 teaspoon ground nutmeg (preferably fresh)
1/4 cup brown sugar
1 pinch salt
1/2 cup unsalted butter
3 tablespoons honey
1/4 cup dried cranberries
1/4 cup dried currants
1/4 cup golden raisins
1/4 cup dried Calimyrna or Mission figs, sliced
Heat oven to 325 degrees. In large bowl, combine first seven ingredients.
In small saucepan, warm butter and honey. Once thoroughly warmed, pour butter and honey over the oat mixture and toss well to combine.
Spread oat mixture evenly onto large baking tray (or two smaller ones) and place in the middle rack of oven. Bake for 20 to 25 minutes, stirring halfway through, until granola turns golden brown.
While still warm, put granola into large bowl and add dried fruits. Stir to combine. Return granola to tray until completely cooled. Store in airtight container. Keeps at room temperature for two weeks or in the refrigerator for a month.
