Surprise Muffins

1 cup Milk
1/4 cup vegetable oil
1 egg, slightly beaten
2 cups flour
1/4 cup sugar
3 teaspoons baking powder
1 teaspoon salt
1/3 cup jam or jelly

Recipe Directions
Mix together: AE Milk, oil, and egg. Add the rest of the ingredients except the jam and stir just to moisten. (The batter will be lumpy.)

Grease 12 muffin cups or line them with paper baking cups. Fill each cup 1/3 full. Drop 1-teaspoon jam or jelly on top. Add more batter to make each cup 2/3 full. Bake at 400º for 20 minutes or until golden brown.
